“Lark Buns” Baked for the Feast of the Forty Martyrs of Sebaste

On the day of the Forty Martyrs of Sebaste, the Holy Church established to serve the Liturgy and relaxed fasting rules allowing oil. Tradition in Russia calls for baking special Lenten “lark buns” in the shape of the birds.

On the eve of the feast, sisters doing baking obedience at the monastery made the buns. These little buns symbolize the souls of 40 martyrs departing to heaven. On this day, skylarks are normally expected to migrate back from the southern skies, followed by the rest of migratory birds. Made from dough, they are like an invitation for spring to come.

Let us share the monastery’s “Sky Buns” recipe.

Lenten dough:

Water – 250 g.

Sugar – 150 g.

Salt – 1 tsp even.

Yeast – 20 g.

Cooking oil – 125 ml.

Flour for baking – 700 g.

Mix the ingredients together in a bowl, place it in a warm area and let rise for 1/2 hour. It will double in size.

Weigh lumps of dough approximately 100 g. each. Roll in balls. Stretch and roll into a long rope and tie it in a knot. Shape one side into a head and, flattening the other end, slice it to have a shape of a bird’s tail. Raisins or baker’s candy pieces may be used for eyes.

Let the buns rest a little bit until they rise. Bake at 180 C for 15-20 minutes.
